Executive Chef Gordon Maybury serves up a tantalizing dining experience in a contemporary dining atmosphere.
Menu:
First Course: Vanilla-thyme Scented Lobster Salad with a cauliflower puree and saffron-champagne dressing. Paired with: Moet Imperial
Second Course: Trio of Duck - a an roasted Breast, Seared foie gras, Leg confit, baby leek-morel ragout, pickled melon, fig molasses, artichoke-roasted tomato salad Paired with: Moet Rose

Private dining Ironwood Steak & Seafood offers private dining rooms at no additional charge. We can accommodate up to 24 in a private dining space and up to 70 in a semi-private dining space. You'll find these rooms great for corporate dinners, client entertainment, birthdays, anniversaries, rehearsal dinners or any special occasion. Each private dining room has a wall-mounted flat screen TV allowing for television viewing or laptop hook-up for presentations.

Our Team
A native of Dublin, Ireland, Gordon Maybury brings over 20 years of culinary experience to PGA National Resort & Spa. Chef Maybury began his career with a traditional apprenticeship, working in some of Ireland's top restaurants and hotels and with the best chefs. He also attended Dublin College of Catering where he was instructed by Kevin Thornton, Peter Timmins and Noel McHugh.
Maybury's recent experience includes, Executive Chef at Loews Miami Beach Hotel, where he was host chef for the past 3 South Beach Wine and Food Tribute Dinners, Executive Chef at the Peninsula Hotel in New York City, where he was in charge of Zagat rated restaurant "Fives" and Chef de Cuisine in both the Grand Hyatt Hotel New York and the Hyatt Regency Hotel and Resort in the Cayman Islands.
In April 2010, Maybury was invited to cook at the prestigious James Beard House in New York City, where his menu "A taste of Miami" won rave reviews.
Maybury was selected in 2006 to participate in the Lufthansa Airlines Star Chef program, where he was responsible for creating a menu of gourmet meals for first and business class passengers on flights to and from Germany.
